This is Fabio's go to secret ingredient for his amazing Ligurian style pesto. The Marchesi family has done an exceptional job in infusing Orange zest into their Extra Virgin Olive Oil, from the Roman countryside. Basil and orange are the ultimate match made in heaven pairing. Substitute this extra virgin olive oil in your favorite pesto recipe, and now it has changed into "Ligurian style". Pesto originates from Genoa in the Liguria region of northern Italy. Pesto can turn any dish into something completely different some of our favorites, classic spread over toasted baguette, pasta topper, use as a filling in your omelets, lightly used over grilled steaks and chicken. Of course the way my father Sal absolutely adores, and shares with everyone, he drizzles the Orange Extra Virgin Oil over my home made vanilla gelato, and yes he sprinkles chopped basil over the top with a sprinkle of fleur de sel. This extra virgin alone is great used in your oil sprayer load it up and spray over seafood, and fresh watermelon or cantaloupe.
